Everyone needs a day off from being glamorous and having it pulled together. Everyone. This Bombshell is no different. Today I woke up and thought to myself -why not just stay in bed all day? You’re already dressed for it and the bed is already warmed up. Trust me, I laid there thinking about this for a good two hours. It has been so cold and back to winter like conditions this weekend, so I wanted nothing more than to be lazy and stay in bed.
Well, I decided I should probably remove myself and I did, but made a compromise with myself to stay cozy and comfortable while doing the bare minimum. I thought, what would be the best way to do that? Answer: Make the best comfort food recipe on the planet. I started scrolling through the endless number of recipes I have pinned on Pinterest. Soup? No. Salad? That’s a joke right? Pasta? Yes!!! So many yeses.
This recipe is not for the days you want to count calories. No. This is for a day just like today. A cold winter day where you want to be lazy, wrapped in blankets, watching endless amounts of television, and eating all the foods! So, if you’re like me and want a day off where your hair is messy, your makeup is less, and you just want a day off as a Bombshell make this….
Italian Sausage Rigatoni with Spicy Cream Sauce
This recipe will take you about 30 minutes to make, which is perfect for lazy days and even those chaotic work nights too!
Here is what you will need:
Rigatoni Pasta – 12 oz.
White Onion – 1 medium sized, chopped
Italian Sausage – 1 pound, you could use spicy or sweet – if you’re feeling frisky use both!
Garlic – 3 cloves, minced
Diced Tomatoes – 1 can (14.5 oz), undrained
Tomato Sauce – 1 can (8 oz)
Heavy Cream – 1/2 cup
Parmesan Cheese – 1/2 cup, grated
Tomato Paste – 1 tablespoon
Olive Oil – 1 tablespoon
Dried Basil – 1/2 teaspoon
Salt – 1/2 teaspoon
Red Pepper Flakes – 1/2 teaspoon
Black Pepper – 1/4 teaspoon
Now that you have everything ready to go this will be easy as pie! Yum, pie. Now I wish I would have made one of those too. Next time!
So, you will want to heat up your tablespoon of olive oil in a large pan. Once the oil is warmed up, add your chopped onion and cook until it softens. You will want the onion to become translucent. Add your pound of Italian sausage to the onion and break into small pieces as it cooks.
After you have fully cooked the sausage, add the minced garlic and let it cook together for about a minute. At this point you will want to drain off any excess fat from the pan.
Once the meat is drained, add the entire can of diced tomatoes, tomato sauce, tomato paste, and your spices: basil, salt, red pepper flakes, black pepper. Simmer these ingredients for 15 minutes.
After your sauce has simmered for 15 minutes, you will add the heavy cream and let this continue to simmer for an additional 5 minutes.
The final step is to turn the heat down to low and stir in the parmesan cheese. Once the cheese is melted in you can pour the sauce over your pasta. Mix well to coat the pasta. That is it! It will smell like your favorite Italian eatery in your home…yum!!! I know this recipe is quite rich and decadent. You could slim it down buy using ground turkey instead of sausage, eliminate the cream if you’d like, or eliminate meat and cream altogether for a vegetarian version. Possibilities are endless.
